Personally I have only learned English, French, and Chinese Mandarin Dialect and grown up on Spanish but I have to say that Chinese is one of the easier ones since you don’t need need to conjugate. You just have to worry about tones and if you need it memorizing characters…
Depends on which is your first language (i mean the one you’ve spoken your whole life). For example, if you already know spanish (like I do) Italian (and maybe even French) would be no problem.
Esperanto is the easiest, but of somewhat limited use! Next to that, of course, it would have to be Spanish. I understand that ASL, or “American Sign Language” is about on a par with Spanish to learn.
Latin might be among the most difficult!

Other than pig latin, the easiest is Italian.
No irregular verbs.
