I know how to spell it in sign language, but want to know if it has one hand movement.

“Infinity” doesn’t have a translation on the ASL site, but perhaps the word “forever” would suffice?
For “forever,” the words “always” and “ever” are combined.
With the right hand, point the index finger and make a clockwise circle (always), then draw the hand back to your body and with the thumb and pinky out, push away from your body.
It’s just two quick movements that are relatively simple to do.
The previous answer is correct if by infinity you mean forever, but if you mean the mathematical term I would go ahead and finger-spell it.
Dunno about the noun form, but here’s how you do ‘infinite’ (same as ‘forever’, BTW):
First, index finger up, make a counterclockwise circle away from you. Then, make a Y with your thumb and pinkie parallel to the ground and your elbow bent and push forward to extend your arm. Check out the video at the link below.
